Okay I made the rice.  Everyone liked it.  It was easy.  I did the optional part.  But I added the enchilada sauce slowly to taste. Also I cut the garlic powder down a little.&lt;br/&gt;&lt;br/&gt;Lime Rice&lt;br/&gt;1 C white rice&lt;br/&gt;2 C chicken broth&lt;br/&gt;1 T fresh lime juice&lt;br/&gt;1 T garlic powder&lt;br/&gt;1 T minced dry onion&lt;br/&gt;&lt;br/&gt;Cook above ingredients according to the rice directions, substituting the chicken broth for water.&lt;br/&gt;&lt;br/&gt;Optional:&lt;br/&gt;When rice is done, add…&lt;br/&gt;½ C chopped cilantro&lt;br/&gt;1 T lime juice&lt;br/&gt;1 C green enchilada sauce&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;Sweet Pork&lt;br/&gt;3 lbs. pork rump roast				1 t salt&lt;br/&gt;1 C dark brown sugar				1 t chili powder&lt;br/&gt;1 C Worcestershire sauce			          1 t garlic powder&lt;br/&gt;1 t dried oregano				          2 T dried minced onion&lt;br/&gt;1 t powdered ginger&lt;br/&gt;&lt;br/&gt;Cook all ingredients in a crock pot all day on low or half day on high.  Remove meat from pot and shred.  Discard liquid.  Put shredded meat back in crock pot and add:&lt;br/&gt;&lt;br/&gt;1 C dark brown sugar&lt;br/&gt;1 C red enchilada sauce&lt;br/&gt;&lt;br/&gt;Leave in crock pot on low to warm the sauce.&lt;br/&gt;&lt;br/&gt;&lt;br/&gt;Creamy Tomatillo Ranch Dressing&lt;br/&gt;1 buttermilk ranch dressing packet (Hidden Valley brand is best)&lt;br/&gt;½ C buttermilk&lt;br/&gt;½ C sour cream&lt;br/&gt;1 C mayonnaise&lt;br/&gt;2 tomatillos, husk removed and diced (sold near jalapenos – get 2 small or 1 large)&lt;br/&gt;½ bunch of cilantro (I wouldn’t do this much – it was too much for my taste)&lt;br/&gt;1 – 3 cloves garlic (as much as you can handle!)&lt;br/&gt;Juice of 1 lime (do this to taste – it may be too tart so don’t use too much)&lt;br/&gt;1 jalapeno (again, to taste – I started with a half and tasted from there)&lt;br/&gt;&lt;br/&gt;Put all ingredients in a blender or food processor and blend until well mixed.  Refrigerate for an hour before serving.&lt;br/&gt;</description>
